Of course, each micro-region and winemaker in that state tries to create an inimitable expression of this wine. But the textural dimension of well-made Californian Cabernet Sauvignon remains the same – plush-like and exquisite, like a gorgeous pashmina wrap for the palate. OREGON PINOT NOIRPinot Noir originally hails from Burgundy, France – a place that creates a style that’s lean, bright and elegant, with suggestions of raspberry and violet, beetroot and cranberry. But, makers in Oregon craft an altogether richer, more opulent style, chock full of velvety dark fruit – warm plums, black cherry and sometimes black pepper and more. The robust style of Oregon Pinot Noir has firmly caught the interest of connoisseurs and budding wine enthusiasts alike, making it quite fashionable right now. Pouring it places you squarely in the know. What’s more, the plush style is particularly apropos as the days get cooler – think cozy sweater in a glass.AUSTRALIAN SHIRAZThe choco-berry-liciousness of Aussie Shiraz is the quintessential fall warmer, with its seamlessly mouth-filling character. This wine always shows jammy fruit and melting chocolate, but it can be quite nuanced too.Frankly, Shiraz from this far-off continent has real range – swinging from easy-drinking, inexpensive pours that work beautifully as warming cocktail wines to deeply serious pours that command attention and respect. The former styles are sweet-fruited and fleshier, while the latter taste drier and more firmly structured. But they all share a wonderful crushed-velvet texture that’s universally appealing this time of year.ITALIAN RIPASSOFace it: Amarone is fancy. It’s a big, bold red made from partially dried grapes that’s pricy to produce and often to pour as well. It’s a smart style to keep on your radar. ARGENTINEAN MALBECMalbec from Argentina is a sumptuous sipper that has gained considerable respect in wine circles lately. Its small, thick-skinned berries just naturally yield that tightly knit mouth feel without the angry tug of mean tannins. It’s a wonderful fall wine. This inky-black wine, which originates in Cahors in southwestern France, has firmly taken root in Argentina and is now that country’s flagship red. Its seductive scents of dark fruit can unravel with amazing complexity – dark chocolate, bonfire, toasted nuts, stones and more. And, when grown at higher altitudes, a lovely chalkiness can underpin the fruit. Malbec is one of the most undervalued wine styles on shelves today.SPANISH RIOJA RESERVA AND GRAN RESERVAFans of velvety red wine need to know about Reservas and Gran Reservas from Rioja in Spain. These wines are made mostly from the Tempranillo grape, which makes a firmly structured wine. The words “Reserva” or “Gran Reserva” on the label means the bottle has aged for at least three and five years, respectively, before release from the winery. To withstand that length of aging before release, the wines must be quite lush and powerful to begin with, since wine loses its fruit concentration with time. But it also gains layers of flavours that add interest. So, when a fine Reserva or Gran Reserva finally reaches your glass, you expect a kaleidoscope of complexity in every lush sip. If you have any questions about this collection notice, please contact us at taste.magazine@bcliquorstores.com.96Autumn Inspirationsfrom page 8SWEET POTATO, BEET AND APPLE GALETTE¼ cup (60 ml) ice water2 tsp (10 ml) apple cider vinegar, divided2 cups (500 ml) all-purpose flour, plus extra for dusting1 tsp (5 ml) salt1 cup (250 ml) cold unsalted butter, cut into cubes1 tbsp (15 ml) Dijon mustard1 tbsp (15 ml) extra-virgin olive oil, plus extra¼ tsp (1 ml) pepper½ tsp (2.5 ml) fresh thyme leaves5 oz (150 g) goat’s cheese, at room temperature, divided1 large red beet, peeled and sliced into ⅛-in (0.25 cm) thick rounds1 medium sweet potato, peeled and sliced into ⅛-in (0.25 cm) thick rounds1 medium baking apple (Honeycrisp, Gala or Fuji) sliced into ⅛-in (0.25 cm) thick rounds 1 Preheat oven to 375 F (190 C).2 In a measuring pitcher, stir together ice water and 1 tsp (5 ml) apple cider vinegar, set aside.3 In a large bowl, whisk together flour and salt. Cut butter into flour mixture using a fork or dough blender. When done, butter should be roughly pea sized and well coated in flour. 4 Add water mixture 1 tbsp (15 ml) at a time and stir into flour mixture with a fork until a shaggy dough forms. Gently knead dough in bowl with hands 3 or 4 times. Shape dough into a disk, wrap in parchment paper and refrigerate while preparing filling.5 In a small bowl, whisk together mustard, olive oil, remaining 1 tsp (5 ml) apple cider vinegar, pepper and thyme until well combined. Set dressing aside.6 On a floured work surface, roll out dough to about a ¼-in (0.5 cm) thick round. Move dough to a parchment-lined baking sheet. Spread 3½ oz (105 g) of goat’s cheese on dough, leaving a 1½-in (3.75 cm) boarder around. Alternate layering slices of beet, sweet potato and apple over goat’s cheese working in a circular pattern and slightly overlapping. 7 Drizzle with reserved dressing before gently folding bare edges of dough inwards on top of filling. Brush crust with a little additional olive oil. 8 Bake until crust is golden brown, and vegetables are softened, about 40 to 50 minutes. Let cool for about 10 minutes before garnishing with a crumble of remaining 1½ oz (45 g) goat’s cheese.
