While this could be taken figuratively as a deserved pat on the back to recognize the amazing produce and potables produced throughout the province, at this time it should also be considered literally given the summer season and BC Day celebrations. So, consider this peak patriotic season. For the toasting classicists out there, it is hard to beat raising a glass of BC-grown and produced Vintners Quality Alliance (VQA) wine served alongside a locally sourced meal, this combo marks the pinnacle of culinary loyalism. What wine and what dish is best for celebratory salutations? The reality, of course, is that it’s complicated. There is no one-shot, definitive wine and food pairing. There are, however, general guidelines that can be applied, strategies that when combined with a local lens – both in terms of grapes and pantry – are likely to lead to a worthy toast to BC.LIGHT WHITE & SEAFOODBC is blessed with an ample coastline, not to mention a treasure trove of rivers and lakes. All this water harbours an amazing diversity of fish and seafood; everything from a spot prawn cocktail to seared wild scallops serves as a fantastic toast to BC. When headed in this direction, look to lighter, higher acidity white wines – no need to overwhelm delicate flavours and nuanced salinity. The options are varied, ranging from lighter-bodied Pinot Gris to Sauvignon Blanc, as well as a few more obscure options like Auxerrois and Sovereign Opal.RICH WHITE & CREAM FLAVOURSOn the other hand, rich flavours can carry a rich wine, and there’s no shame in going big with the wine and food pairing. While this often leads people to lean towards darker, red shades in their glass (and typically big portions of protein), the reality is that a whole other spectrum of bold flavour awaits. For example, think unctuous cream sauce. A batch of pillowy gnocchi (heck, make your own with Pemberton potatoes for full Canadian content credit!) tossed with a sauce subtly imbued with BC blue cheese offers a shoe-in with a rich, oak-aged Chardonnay. Similarly, anything corn-related tends to marry well with Chardonnay, whether it’s fresh on the cob and rolled in butter, freshly shucked into a chowder, or whipped up with prawns and grits!ALL-AROUND PINK & EVERYTHINGWhich brings us to pink wine, or rosé. Rosé is the everyday wine, typically marking the happy mid-point between white wine’s more usual crispness and acidity and red wine’s toothy robustness. It’s not an overstretch to say that rosé can provide the best of both wine worlds, particularly when served chilled. So, if the BC Day feast features a smorgasbord of treats, a smart move is to crack open a bottle of all-around pink wine. SILKY RED & PLANT-BASED CUISINEWhat’s a silky red? Admittedly, it’s more a state of mind in the glass than a definitive style. But the best answer is that a silky red eschews big tannins and overt oak for a robust, yet smooth flavour profile. The result tends to be fruit-forward and food-friendly; wine made from grapes ranging from Gamay to Pinot Noir. Well once again, fortune shines on British Columbia, which has you covered on all fronts, from pasture-raised beef and lamb to vineyards bearing Cabernet Sauvignon and Cabernet Franc, along with all the other classic Bordeaux red grapes.Did you know?When in doubt, go bubbly!
