Using a fine strainer, strain rhubarb and ginger from liquid. Allow mixture to cool down, bottle and date. Lately we are seeing a trend of serving red wines chilled down to a refreshing temperature between 14 and 16 degrees, only slightly warmer than whites! Most of us have experienced summer afternoon or evening get-togethers where the whites and pinks come out of an ice bucket – any reds are usually on the table at the ambient temperature. The unpleasant character of wine when it is too warm, white or red, is something we can avoid. Too warm and it becomes more like soup and has no refreshing qualities at all. Chilling down reds can bring out a fresh, inviting character that is missed when the wine is served too warm. There is a sweet spot for getting the best from a red and it is never room temperature these days. The custom of serving red wine at room temperature originated centuries ago, before central heating. Everyone wore three or four layers of clothing indoors. Room temperature was a cool 18 degrees or lower. Even sturdy red Bordeaux or Napa Cabs taste better at 18 degrees than at 22. Generally, the lighter-bodied a wine is, the cooler it should be when consumed. And don’t assume that a half hour in the fridge is enough. Trial and error proves that to chill a wine from 22 degrees to 16 takes over an hour on the fridge door. BC Liquor Stores are full of red wines that like a chill. Gamay is one of the best candidates, either regular Beaujolais or, better yet, one of the ten Crus. The Brouilly from Château de Pierreux is delicious and very well-priced. Cru Beaujolais is cool again, as evidenced by the increased selection on store shelves. Pinot Noir has been on a roll since the movie “Sideways” and it loves the fridge. It is available from many areas of the world; check out examples from the Okanagan, Chile, coastal California, New Zealand, cooler areas of Australia and the Loire Valley (red Sancerre). There are many to choose from at all price ranges. From the Rhône Valley there is a wide variety of reds to experiment with. Some great options include regular Côtes du Rhône, Côtes du Rhône Villages and Ventoux. They love the barbecue and offer serious value. Offer a selection and host a tasting as well as a meal.Another grape originating in France is Cabernet Franc, Cabernet Sauvignon’s baby brother. It is used mostly as a blending grape in Bordeaux, but from the Loire Valley it is unblended. Always bright and fruity, it has less body and tannin than Cabernet Sauvignon. Look for Chinon, Saumur or the delicious well-priced red Anjou from Château de Champteloup. The Okanagan Valley is also a great source for Cabernet Franc. The wines tend to be full and rich and are becoming one of BC’s star red wine grapes. Chill to around 16 degrees.Northeast Italy is another treasure trove of lighter reds to chill down. Much of the wine made here is white, but around Verona they grow Corvina, blended with Rondinella and Molinara. Look for Bardolino and of course Valpolicella, of which there are many on BC Liquor Stores’ shelves. Both regular Valpolicella and the richer Ripasso version work well chilled with grilled fare. However, be careful with the extremely rich and full-bodied Amarone.
