TURMERIC RISOTTO SERVED WITH CIDER-GLAZED PORK TENDERLOIN

Ingredients

Serves 4
1 tbsp (15 ml) grapeseed oil
½ cup (125 ml) diced yellow onion
2 garlic cloves, minced
½ tsp (2.5 ml) salt
1 pinch black pepper
1 tsp (5 ml) turmeric
1 cup (250 ml) Arborio rice
2 cups (500 ml) no-salt-added chicken stock, plus extra
¾ cup (175 ml) hard apple cider
½ cup (125 ml) finely grated Parmesan, plus extra
Cider-Glazed Pork Tenderloin, to serve, recipe follows
CIDER-GLAZED PORK TENDERLOIN:
1 tbsp (15 ml) grapeseed oil
2 pork tenderloins, about 1 lb (500 g) each
salt and ground pepper, to taste
¼ tsp (1 ml) ground turmeric
¾ cup (175 ml) hard apple cider, plus extra
1 Granny Smith apple, cored and sliced into 16 wedges
2 sprigs fresh thyme
1 tbsp (15 ml) cold unsalted butter
1 tbsp (15 ml) chopped fresh flat leaf
parsley leaves, for garnish

Instructions

  1. Preheat oven to 375 F (185 C).
  2. In a 3- or 4-quart (3- or 4-L) Dutch oven over medium heat, heat grapeseed oil. Add onions and cook, stirring frequently, until translucent and starting to brown, about 4 minutes. Stir in garlic, salt, pepper and turmeric and continue to cook another 2 minutes. Stir in rice and cook until toasted and just beginning to brown, about 3 minutes. Pour chicken stock and cider over rice mixture and bring liquid to a simmer. Stir in cheese before placing Dutch oven in preheated oven and cooking uncovered for 15 minutes.
  3. While risotto bakes, start making Cider-Glazed Pork Tenderloin, separate recipe follows.
  4. After rice has cooked for 15 minutes, stir mixture and continue to bake until liquid is absorbed and mixture is creamy, another 10 to 15 minutes. If rice mixture is still slightly crunchy, stir in more chicken stock about ⅓ cup (75 ml) at a time and bake another 5 to 10 minutes.
  5. Once baked, allow risotto to cool for 10 minutes. Serve warm with Cider- Glazed Pork Tenderloin and an additional sprinkling of Parmesan, if desired.
  6. TO MAKE CIDER-GLAZED PORK TENDERLOIN: Preheat oven to 375 F (185 C).
  7. Heat oil in a large ovenproof skillet over medium-high heat. Season pork tenderloins with salt, pepper and turmeric. Sear pork in hot skillet until browned all over, about 2 minutes per side. Add cider, bring to a boil and transfer skillet to oven and roast until internal temperature of pork reaches 145 F (63 C), about 30 minutes. Transfer pork to a cutting board and let rest for 10 minutes while preparing sauce.
  8. Place same skillet back over medium heat and add apples and thyme sprigs. Cook, turning apples occasionally, until softened and starting to caramelize, about 5 minutes. If pan gets dry add some additional cider. Remove skillet from heat and stir in cold butter with a wooden spoon.
  9. To serve, slice pork tenderloin into medallions. Divide pork over portions of turmeric risotto and top with some caramelized apples and a spoonful of pan sauce. Garnish with a sprinkle of chopped parsley and enjoy.

TURMERIC AND SWEET POTATO SOUP

Ingredients

Serves 4
½ cup (125 ml) natural almonds
2 tbsp (30 ml) tamarind sauce
3 tbsp (45 ml) coconut oil, divided
12 sage leaves
1 yellow onion, peeled and chopped
3 garlic cloves, minced
1 tbsp (15 ml) turmeric powder
½ tsp (2.5 ml) smoked paprika
1 tsp (5 ml) salt
1 x 13.5 oz (400 ml) can coconut milk
2½ cups (625 ml) vegetable stock
10 cups (2.5 L) peeled, cubed sweet potato
1 lime, juice only

Instructions

  1. In a small frying pan over medium heat, stir together almonds and tamarind, stirring constantly, until moisture evaporates and pan is dry, about 5 minutes. Tumble onto parchment paper and let almonds cool before coarsely chopping. Set aside for garnish.
  2. Wipe out frying pan, add 2 tbsp (30 ml) coconut oil and warm over medium heat. Carefully, as oil will sputter, add 4 or 5 sage leaves to frying pan. Fry until darkened and crispy, about 30 to 45 seconds. Transfer to a paper towellined plate to drain. Repeat frying with remaining sage leaves. Set aside.
  3. In a large saucepan over medium heat, warm remaining 1 tbsp (15 ml) coconut oil. Add onions and cook until translucent, about 8 minutes. Stir in garlic, turmeric, paprika and salt and cook until garlic is fragrant, about 1 minute. Set aside 2 tbsp (30 ml) of coconut milk in a small bowl for garnish. Add remaining coconut milk, stock and sweet potatoes to saucepan. Increase heat to high and bring soup to a boil before reducing heat to medium-low and allowing to simmer, uncovered, until sweet potato can easily be pierced with a fork, about 30 minutes.
  4. In a blender, purée soup in batches until smooth. Return to saucepan over low heat and stir in lime juice. Adjust seasoning, if desired.
  5. To serve, divide warm soup among soup bowls. Garnish with a drizzle of reserved coconut milk, some chopped tamarind-spiced almonds and a few fried sage leaves. Serve immediately.

  1. In a cocktail shaker with cubed ice, combine Chambord, brandy, lemon juice and bitters. Shake vigorously and strain into a small wine glass rimmed with vanilla sugar and garnish with a lemon zest.
  2. TO MAKE VANILLA SUGAR: In a bowl, mix 2 cups (500 ml) sugar with 1 tsp (5 ml) pure vanilla extract. Mix thoroughly then spread out mixture on baking sheet to dry (20 to 25 minutes). Store at room temperature.

3 oz (90 ml) soda water

  1. In a cocktail shaker with ice, combine rum, cordial and lemon juice. Shake vigorously and strain into a Collins glass over cubed ice. Top with soda water and garnish with sliced pear.
  2. MAKE IT A MOCKTAIL: Prepare as above, omitting spiced rum from recipe.
  3. TO MAKE SPICED PEAR CORDIAL: In a saucepan, combine 2 cups (500 ml) pear juice, 1 cup (250 ml) sugar, 1 tbsp (15 ml) cracked whole allspice, 1 cinnamon stick, 1 tsp (5 ml) citric acid and simmer to dissolve sugar. Once dissolved, remove from heat to cool. Strain out solids and seal in a bottle. Can store in refrigerator for up to 2 weeks.

2 oz (60 ml) Raspberry-Hibiscus Tea Cordial, make ahead, recipe follows

  1. In a cocktail shaker with ice, combine gin and cordial. Shake vigorously and fine strain into a Champagne flute. Top with sparkling wine and garnish with a raspberry.
  2. MAKE IT A MOCKTAIL: Prepare as directed above, omitting gin, and topping with soda water instead of sparkling wine.
  3. TO MAKE RASPBERRY-HIBISCUS TEA CORDIAL: Steep 3 Raspberry-Hibiscus tea bags in 3 cups (750 ml) boiling water for 5 minutes. In a saucepan, combine 20 oz (600 ml) of steeped tea, 1¼ cups (310 ml) sugar and 2 tsp (10 ml) citric acid. Simmer to dissolve sugar and remove from heat. Once cooled, store in refrigerator in a sealed bottle for up to 2 weeks.
